So the salsa recipe is from my friend in Arizona. After retirement, I enjoyed swimming with a few gals in the neighborhood. One morning my friend Mirna invited the women to come to her home and try her salsa. It was 10 am. We all agreed to come right then. Man, it was absolutely delicious. This is one of those recipes that you can adjust to suit you. Some like more garlic and some like less. It will be thick and more spreadable than dippable which means need you will need a spoon to fill the chip up but worth it. I was given this from a friend who got it from a friend and so on. Pancit Bihon is a Filipino stir fry noodle dish. Whatever the occasion (birthdays, Christmas, Thanksgiving, etc.) Pancit is always on the menu. It is said that the long noodles represent longevity & so it’s fitting for this dish to be served on any occasion. It is definitely a crowd favorite. Like many family recipes passed down from generation to generation, there likely isn’t an exact recipe. When my Inang (Grandma) & my mom make it, they just cook using their senses (how it looks & tastes). In fact, I do the same thing. I just grab some of this & some of that & use what I have in terms of protein & start cooking. But for the purpose of sharing this recipe with others, I sat down & wrote it out. You’re welcome! Our family has a strong history in the Military. 2 members on each side of my family served in WW2 (both in Italy & Holland). Both of my brothers served as well. Hint - I probably use 2 tsp cinnamon, I love cinnamon and 1.5 tsp vanilla extract. I didn’t use chocolate chips but used 5/6 blueberries - so 60-70 frozen blueberries ( not sure of cup amount) was enough to make the muffins burst with blueberries - super soft but not falling apart. And I had used 4 small ripe bananas. If super large stick to 3. All other measurements were exact. You must use almond flower no replacement and fine is best.
