In 2017, I traveled to Thailand as part of a G Adventures tour. We had the pleasure of going to a Thai cooking school. This was one of the recipes we tried.

Cookbook Recipe
Salsa Roja - Mexico
So the salsa recipe is from my friend in Arizona. After retirement, I enjoyed swimming with a few gals in the neighborhood. One morning my friend Mirna invited the women to come to her home and try her salsa. It was 10 am. We all agreed to come right then. Man, it was absolutely delicious. I ate so much that I didn’t need any lunch that day. ¡Arriba! Maybe that was the day that I decided to start learning the Spanish language. Jaja

Cookbook Recipe
Guacamole
This recipe was shared with me by my Mexican mom. While not my biological mom, she has loved me like a daughter ever since I became friends with her daughters many years ago. Learning this recipe and even winning a work contest for it has made her proud. It makes me proud to be able to represent her Mexican heritage!

Cookbook Recipe
Super Easy Wickedly Good Cheese Dip
This is one of those recipes that you can adjust to suit you. Some like more garlic and some like less. It will be thick and more spreadable than dippable which means need you will need a spoon to fill the chip up but worth it. I was given this from a friend who got it from a friend and so on. I believe a night of good card-playing was involved when I had my first taste test and was hooked! Warning it is addicting and should be shared with your spouse!

Goes great at a Grey Cup Party - should that ever happen again!

Cookbook Recipe
Lemon Loaf
I found this recipe in a Doukhobor cookbook when we moved to Kamsack, Saskatchewan 45 years ago. While I can almost make it in my sleep now, its spattered page shows frequency of use. It has become my signature gift of thanks, welcome, hospitality, birthdays and funerals.

Cookbook Recipe
Koek - Dutch spice Cake

Cookbook Recipe
Mom's Borscht
From my childhood... I believe this recipe was originally my Grama’s. My Grama Pearl’s family was from a Ukrainian part of Russia. I believe she was born in Canada but I’m actually not really sure as she and my mom both passed over 10 yrs ago. One interesting fact that I didn’t learn until after they were both gone was that my Grama’s legal name was Paraska...never knew that, she was just always Grama to me.

This recipe is so amazing. It is another one that I tried from my trip to Thailand and it goes great over rice.

Cookbook Recipe
Pancit Bihon - Philippines
Pancit Bihon is a Filipino stir fry noodle dish. Whatever the occasion (birthdays, Christmas, Thanksgiving, etc.) Pancit is always on the menu. It is said that the long noodles represent longevity & so it’s fitting for this dish to be served on any occasion. It is definitely a crowd favorite. Like many family recipes passed down from generation to generation, there likely isn’t an exact recipe. When my Inang (Grandma) & my mom make it, they just cook using their senses (how it looks & tastes). In fact, I do the same thing. I just grab some of this & some of that & use what I have in terms of protein & start cooking. But for the purpose of sharing this recipe with others, I sat down & wrote it out. You’re welcome! Sarap sa pagkain! (Enjoy your meal!)

So as you can see this recipe along with the Bean dip & Taco Soup are all Mexican type foods. They are actually all from Mennonite family cookbooks (on my husband's side of the family). These are Ukrainian Mennonites, and I'm pretty sure that the Mexican tones are from the Mennonites that reside in the Chaco, in Paraguay.

Favourite Topping Cheese Cake
Not all chocolate bars may work as well as others. Found best to be Reese peanut butter cups, skor, smarties, m&m, Reese pieces. If making graham crust with graham or cookie crumbs, complete as the box describes and desired thickness. If using pie filling, rather than mixing into the cream cheese mix, pour the mix into the pie crust & pour the Pie filling on top then spread evenly.

Cookbook Recipe
Boiled Raisin cookies - These cookies are a family favourite!
Our family has a strong history in the Military. 2 members on each side of my family served in WW2 (both in Italy & Holland). Both of my brothers served as well. One in the Army (deployed to Germany ) & the other was in the Navy during the Vietnam War. My eldest son was also a medical aid in the Army.

Cookbook Recipe
Almond Flour Banana Muffins
Hint - I probably use 2 tsp cinnamon, I love cinnamon and 1.5 tsp vanilla extract. I didn’t use chocolate chips but used 5/6 blueberries - so 60-70 frozen blueberries ( not sure of cup amount) was enough to make the muffins burst with blueberries - super soft but not falling apart. And I had used 4 small ripe bananas. If super large stick to 3. All other measurements were exact. You must use almond flower no replacement and fine is best. I used Costco’s and I just put in the paper lining so no greasing was required.
