Growing up one of the best comfort foods was my Mom's deviled eggs. I always looked forward to family gatherings and holidays as this was her staple appetizer/side dish. I've had many folks' versions yet none quite tasted like my Mom's.

Hillbilly Chili
Southern Style Version of Chili. Basically a twist on good ole Beans and Ham. Growing up this was a favorite of the family. Originally made by my Grandmother and carried on by my Mother. She would always serve with the good ole glass of Green onions in middle of the table and a fresh batch of cornbread.

Growing up this was a regular side dish. Mom always had okra growing out back. When we didn't have any I remember Mom sending my Dad out on a hunt for Fresh Okra.. They would buy tons of it, Grow it, Freeze it to be sure we always had a supply. Still my favorite side dish.

While this is not one of my Mom's Recipes when I discovered it I knew this would have been one of her favorites. Everyone that has tried it says the same thing: "This is the best Roast I have ever had"

Biscuits and Gravy Momma's Way
It's simply a given that every southern household has their can of Bacon Grease. It is like liquid gold to a southern cook. We cook everything in Bacon Grease. That being said, growing up we hardly ever had Sausage around the house. It was a luxury item and only had it on special occasions. But we always had that can of Bacon Grease. It wasn't until my teens that I ordered Biscuits and Gravy at a Restaurant that I ever even heard of or tasted Sausage Gravy. I actually almost spit it out declaring what the hell is this?? My Momma always made her white gravy from Bacon Grease. Was served over Biscuits, Chicken Fried Steak and so on. Once you have taste it you never forget it. It is still our favorite comfort food.

Bruce's Garlic Cheese Sauce
A good buddy and band mate of mine used to own a Sub Shop. He served a sandwich called a Roast Beef and Cheese Sauce sandwich. It was to die for. I never did get an exact recipe, but simply experimented until I got close. My kids growing up loved the stuff. To this day every time they come to visit this is the requested (more like required) dish. I use on a multitude of dishes but mostly some form of beef sandwich including Hamburgers. I even use to spice up Steak ums.

Growing up I never new this was actually an Amish Dish. However, My mom would make a batch of these bout once a month and we would all snack on em. To this day it is still a great comfort snack for me.

I learned this from an old friend from West Virginia. He would serve as finger food when we went camping. Works great with Shark and Swordfish. I've done it with Catfish and porkchops as well. The spices in Captain Morgan just make the meat pop.

Swiss Steak
My Mom would make a few variations of this depending on how much time she had and what she had on hand. Was a great twist on plain ole Cube Steak. I've served it with Mashed Potatoes, with Pasta to give it an Italian flair. McCormick makes a Swiss Steak "Bag and Season" that is pretty close and good. However, it is hard to find in stores. But it can be ordered on Amazon if you want the easy way out.

Inspired by dear friend, late great blues hall of famer Harley Lamoureux. Every we would go to dinner he would prepare this for my daughter who just LOVEDDD his Mac and Cheese and swore it was the best in the world.
