Eggs Denver Style

Ingredients You'll Need
2 tablespoons Light Olive Oil
3 tablespoons chopped Onions
1/4 cup chopped Green Sweet Pepper
1/2 small whole (2-2/5" diameter) Red Tomatoes
1/8 teaspoon Red or Cayenne Pepper
2 large Eggs (Whole)
4 ounces boneless, cooked Fresh Ham
Heat oil in large heavy skillet over medium heat. Sauté white onion 5 minutes, until softened.
Add green peppers, diced tomatoes and cayenne. Cover and cook 5 minutes, until vegetables are very soft, stirring occasionally. Season with salt and freshly ground pepper and set aside.
In small bowl, beat eggs until blended. Set aside.
In large nonstick skillet, add the ham and cook 3 minutes or until just beginning to brown on the edges. Add the pepper mixture and then the eggs. Stir the mixture until the eggs begin to scramble, about 5 minutes. Serve immediately.
