Why I Love This Recipe

This recipe makes for a wonderful French breakfast! Peyton says it is a family favorite!


Ingredients You'll Need

CREPES
4 eggs
½ cup of butter, melted
⅓ cup sugar
1 cup milk
¼ cup water
1 tsp vanilla
1 cup flour
Dash of salt
FILLING
1 cup sour cream
8 oz cream cheese, softened
1 cup powdered sugar


Directions

CREPES


Blend everything except the flour in a mixer. Sprinkle in the flour and blend until incorporated.


Refrigerate for at least one hour. Remove from fridge and blend again for one minute.


Heat a lightly oiled frying pan over medium high heat. Scoop the batter into the pan, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.


Cook the crepe for about two minutes, or until the bottom is light brown. Flip the crepe and cook the other side.


Transfer crepes onto plates.


FILLING


Blend the sour cream, cream cheese, and powdered sugar.


ASSEMBLY


Spread a thin layer of filling over half of each crepe. Fold the crepes over twice, forming triangle shapes. Enjoy!
